Breakfast at Seattle's Best

Friday, February 9, 2018

One more day before Tapioca turns a year older. This year is going to be special because his Mom will be in town to celebrate with us. I would love to tell you more about it but that'll be for another blog post to make.

For now, I will be blogging about our breakfast date this morning at Seattle's Best.

Tapioca and I will be shopping for new clothes at Market Market but before doing so we needed sustenance. We decided to meet up at Tim Horton's after work but ended up at Seattle's Best. I chanced upon their breakfast spread and got enticed by the sausage and cheese egg skillet. How can I say no to an egg dish in the morning? The egg addict in me felt giddy with excitement.

. . . tapioca's choice

Tapioca chose the Big Breakfast Plate 3 which consisted of schublig sausage, bacon strips, eggs, pancakes, wheat bread and fruit marmalade. He was very happy with his food. Super sulit for 250++ bucks. His only comment was that the bacon should be cooked longer to make it crispy and his egg cooked shorter because it was almost well done. And mustard should be made available for the sausage.

jellybean's choice . . .

My skillet. Bacon and cheese. At the last minute, I've changed my mind and zeroed in on the bacon instead of the sausage. Happy that my eggs were cooked right - still runny. It was lovely. I thought the toast that came with it wasn't enough but it turned out just right.

For the drinks, I had a Dilma strawberry tea and he had an Americano. Both were steaming hot which was how I like it.

. . . our brekky spread

And because I wanted a cold drink (plain water wouldn't do), I've also ordered an OJ. It was thick but I can tell it came from the carton.

peace out . . .

. . . my haggardo verzosa face

No more dessert for us. We were full and satisfied with our meals. And now we're ready for some retail therapy.

Pinoy Food for Tapioca's Birthday

Tuesday, February 12, 2013

I know it sounds weird to be cooking Pinoy food on Chinese New Year but I did. Chinese cooking is not really my forte (as if I have any forte in cooking, LOLZ!!!). Anyway, this is about Tapioca's favorite Pinoy food and I found an easy to follow recipe courtesy of Mama Sita. I thought I'm gonna cook all three dishes by myself but my brother came up to our house, much to our surprise. Good thing cause he became my assistant the whole time I was cooking.

This post is an account of my cooking experience. I'm making a blog post on this to help me remember. Let me tell you one thing. It was the first time I tried cooking all three dishes. The cookbook was a HUGE help. But before I followed everything on the cookbook, I tried to cross-reference the recipes from other reliable cooking blogs to check if there's something I can tweak on the recipe like add an ingredient or two or try a different approach or techniques.

First dish - Caldereta.

I cooked the Caldereta first. It was super easy. I followed everything in the book from the ingredients to the procedures. The recipe uses the Mama Sita Caldereta mix therefore it did not require you to add any garlic, onions or tomatoes. However, Connie from Casa Veneracion mentioned that a good Caldereta uses a good amount of these stuff and I believe her. Also, Tapioca loves onions. So I saute a whole bunch of garlic and half a kilo of onions together with the browned  beef. As I was simmering the meat and waiting for it to become tender, I worried about the onions. There's just too much. It's like I'm making French Onion Soup. When the meat was tender, I put the sauce mix in, the potatoes, carrots, bell pepper and olives. While mixing everything up, I realized the onions suddenly vanished - like magic! Tapioca tried it and said it was perfect. He loved it! The sauce tasted like authentic Caldereta. We hardly noticed it came from an instant mix.

Second dish - Fresh Lumpia.

For the recipe, it only requires Mama Sita ginisa mix for the veggies. The grocery sold ginisa mix for a whole pack and we never use those in our kitchen. Since I'm out of onions (I used them all for the Caldereta) I went to the nearby sari-sari store and bought the Ajinomoto ginisa mix (they didn't have the Mama Sita brand). Anyway, when I sauteed all the veggies, they turned out all right. I added some fish sauce for more flavor and it came out fine. The sauce was very simple and easy to make. The recipe asked for 6 tablespoons of cornstarch. I thought it was too much and also I'm out of cornstarch. I still needed them for the wrapper. While I was boiling the sauce I thought it was not thick enough and that I should have followed the recipe. When the sauce cooled down, it turned into a really thick paste. Tapioca did not like it. I made a second batch using 2 tablespoon of cornstarch and the consistency was much better.

The wrapper was quite a challenge for me. Making the batter was easy-peasy. Cooking them was not. We only have 2 pans. Big and small. First I used the big one and I couldn't make a round wrapper. Until I had no choice I asked Tapioca to help out. He used the small pan and it worked out right. The problem was it's hard to wrap the veggies in a smaller wrapper. It breaks easily. Tapioca found a solution. He cooked the wrapper a little longer and it helped that he made it a little more thick, too. Sort of like a crepe kind of thickness. The wrapper didn't break but I was still having such a hard time wrapping it. The filling spills out from the lettuce leaf. When we're out of lettuce, it becomes easier to wrap them. Though having a lettuce leaf makes the lumpia more presentable.

Third dish - Pancit Palabok.

This was the last dish I've prepared. The Palabok I would say was easy, too. Except it requires a lot of ingredients that needs to be prepared separately such as:

- Cook the noodles.
- Boil the pork.
- Boil the shrimp.
- Boil some eggs for the toppings.
- Use the pork stock to make the sauce.
- Grind the chicharon (good thing I already bought a ready made tinapa toppings or else it would eat up my time picking up the bones.)

Yes the procedure was really easy. Just boil everything. But prep was such a hassle. Sobrang busisi! And it did not help that we only have 2 pots and pans (big and small). So what to do? No choice but wait until one of them is done cooking so I can use the pots.

Now I understand why on every fiesta or celebrations where there's a big handaan they require so many pots and pans because it's necessary to cook things faster. Did I also mention, time is key? Yes it is. Because people are waiting so they can eat because hello they are hungry and lunch time is lunch time. Because I'm being a Martha Stewart wanna be, nastress out ako ng bongga! Hahaha!

Here I am trying the best that I can to wrap the veggies as neat as possible. Promise ang hirap pala lalo na with the lettuce. My kitchen was a mess. Told ya, I was stressed!

Here's the spread . . .

That's the best I can with those lumpia. Then there's the brown sauce for the lumpia. the palabok sauce and the bowl with cover, that's the Caldereta.

In fairness, konti na lang natira. Or because ang tagal kong nagluto nagutom na mga bisita. Lol!!!

This was the cake I bought from Goldilocks . . .

. . .  and the cake innards

This one was given by Dirk . . .

Super moist chocolate cake with caramel! This cake was super yum! We always pass by Cake 2 Go on our way to work but I can't believe we never tried their products until now.

The birthday boy with his cake and the leaning brown-out candle. Hahaha!

It was a simple fare with a few friends who came to celebrate with us. Though, it was not what I would like it to be, what's important is we were together on his special day and he is recovering well.

Kung Hei Fat Choi & Tapioca's Birthday

Saturday, February 9, 2013

I don't know if it's luck or what. Tapioca's birthday fell on a Chinese New Year. The year of the water snake.

Our year didn't really  start out good. Nanay and Tapioca got sick. We've been going in and out of the hospital for the whole month of January. Kulang na lang tumira na kami dun. Then, February came and Tapioca went under the knife. He had bilateral hernia which can only be fixed thru surgery.

After all we've been through, you can just imagine how he was not really in the mood to celebrate. But you know me, I love birthdays. And it's a milestone for him. It's his 30th Birthday! I thought it's not right to just let the day pass without celebrating his special day. It's also a thanksgiving for surviving all the storms and trials that went our way. Eh ayaw talaga. I bargained to buy him a cake. A tiny one therefore not something fabulous. His only request is for me to get his fave flavor -an ube cake. And . . .  tikoy. Yes! At least pumayag.

I went to Cubao earlier today and bought the cake and the tikoy. It felt kinda weird not buying stuff like pasta or something. Eh ayaw nya so I really didn't buy anything anymore. Then evening came, I got in touch with Nanay to check how she was doing. Our conversation ended up with food (we love and live to eat tee hee!) and she mentioned having Caldereta for dinner because my second cousin celebrated his birthday too. Tapioca overheard the conversation and said "I want Caldereta too!"

And the idea sparked. I know I have to make his day really special. I recently bought this cookbook from the National Book Store. It is basically like an advert for Mama Sita as every dish requires you to use a Mama Sita product. But the thing I liked about it is how easy, simple  and no frills are the recipes. It's the perfect recipe book for people who don't have the luxury of the time to do laborious cooking.

As I was browsing the book for the Caldereta recipe, I came up with the menu for tomorrow.

- Caldereta
- Pancit Palabok
- Fresh Lumpia

Pinoy fare lang ang peg. Just a few of Tapioca's favorite Pinoy dishes. Looking at the recipes, they're so easy to follow and I knew I could do it. I have been cooking everyday since we got home from the hospital without any assistance from Tapioca. I am so proud of myself. I'm taking my domestic goddess into the next level tomorrow. Hope I can pull it off.

The Big 3-0

Friday, December 21, 2012

Yesterday, I turned 30. I was completely okay with it unlike what I felt last year on my 29th birthday. I realized, 30 is still young and cool and not old. I mean, it's still far from getting a senior citizen discount, right?

You only turn 30 once in your life and some people would have a huge party or do something epic. I did consider doing the same thing but after all we've gone through this year, I figured I just wanted a simple celebration. Just me and the love of my life. We had Chinese for lunch at Komrad. Tapioca was dying to try this place out.

I love the modern interiors and the Mao Zedong mural. Tapioca didn't know who Mao Zedong was and he's Chinese! He prolly slept during his history classes. LOL!

. . . root  beer & red iced tea

Root beer for him and red iced tea for moi. The iced tea was too sweet for my taste.

birthday noodles . . .

Of course, hindi mawawala ang birthday noodles for long life. I find the colored quail eggs really cute and girly!

. . . mapo tofu

They had mapo tofu on the menu so we had to try it. We had high expectations knowing they serve Hunan and Szechuan cuisines (read: spicy). However, it turned out to be a total disappointment. Not so Hunan after all (read: not spicy). Or maybe we should have told them we wanted our mapo tofu really hot and spicy. We had better mapo tofu elsewhere.

. . . porky dish

Originally, I wanted lobster but the only seafood available was crab. We didn't feel like eating crabs so I opted for pork which we haven't had in a while. Tapioca is on a diet and he mostly ate fish and a little bit of chicken. But on my day, I asked with fluttering eyes if we can have pork. Not quite sure what to order, we asked for a recommendation and that's how this dish ended up on our table. It's like your ordinary sweet and sour minus the oomph.  Sorry, I forgot what it's called. The dish is as forgettable as its name.

mango sago . . .

For dessert, I had mango sago. I miss this dessert so much and it's such a shame Komrad let me down. The mango they used was sour and this was served lukewarm. I had a spoonful or two and told Tapioca to move to another place for dessert.

. . . Tapioca and the birthday girl

We finished everything except for the dessert. Tapioca doesn't eat mango so it went to waste. Komrad didn't quite live up to our expectations. It was unfortunate this happened on my special day. Still, we're willing to give them another try. Hopefully they have lobster available next time and that Tapioca is no longer on a diet so we can try more dishes hehehe!

A birthday will never be complete without a cake. For dessert, I was torn between UCC or Italianni's. Since the latter was much closer, we ended up at . . .

Italianni's . . .

This is how I look at 30. Not bad eh?

We decided to dine al fresco.

We also had a pot of English breakfast tea. Fifteen minutes has passed and still we're waiting for the cake. I thought they forgot we ordered a slice.

. . . my birthday cake

Finally, it arrived and my oh my, it was so tall and huge and pretty!!!!

view of the cake from another angle . . .

For the record, this was the most expensive slice of cheesecake I've ever had. But I tell ya, it's worth every cent. It was frozen (just like the cheesecake from Cheesecake Factory). They have to thaw it for a few minutes and that's why it took quite a while. Well, it's worth the wait :-) Super creamy, smooth and cheesy! And that red sauce matched the cheesecake perfectly. The cake slice was so big Tapioca and I had a hard time finishing it.

La la la means I heart you ! ! !

Since we're eating outside, people who walked by were staring at my cake. I swear I can see them even from the back of my head LOL! Theses photos makes me drool right now*wiping out drool on the keyboard*

The cake was the saving grace of the day. We completely forgot about the disaster meal at Komrad. Now, if only we had Italianni's instead of Komrad. They have really good steaks at reasonable prices. Next time!

After dessert, I went shopping naman. Marks & Spencer was on sale!

. . .  my loot

Did I tell you I like to hoard shower gels & lotions? Yes, I do! And M&S is one of my favorite brands. Now that I'm 30 and my skin is prone to drying, I really need a great skin care regimen. And these products are a good way to start. I think I need to invest in anti-aging creams, too. Oh well, I want to look fab when I turn 40!

On my birthday weekend, Tapioca brought me flowers!

 my just-woke-up face . . .

. . . mochi thought it was a toy :-)

This is the second time Tapioca gave me flowers. First time he gave me one, I ruined it. I told him not to give me any more flowers because I thought it was a waste of money knowing that it would wilt eventually. When my father passed away, my views about flowers changed. More than love, to me, flowers symbolize life. Very much like our lives here on earth. Flowers are meant to die and that we should cherish them while they last.

Wala pala kami flower vase sa bahay so I used a recycled bottle. It turned out just fine.

I have been blessed with so much love that I can't ask for anything more but for good health and live a longer life so I can continue to be a blessing to others, too.
